It’s a grown up and summer time take on everyones favorite messy dessert, THE SMORE, and it’s easy as pie.
The thing that screams summer to me is the beautifully luscious sweet and tart yellow nectarines you get toward the end of the season. Hey, you have to save the best for last, right? They are fragrant and juicy, and in my opinion are way better than peaches because they don’t have the fuzz! Marry that with the ooey gooey-ness of smores and it’s a match made in heaven… well my heaven anyway.
What you’ll need:
Nectarines (1 per every 4 ppl)
White Chocolate Candy Bar (you could also use regular chocolate or or a caramel flavored chocolate- no rules here!)
Cooking Oil (olive, canola, etc.)
Grill or Grill pan
Heat the grill pan on medium high heat and lightly oil it. Carefully slice the nectarine in thin slices about 1/4 of an inch thick. Place the nectarine slices on the grill pan and cook for about 2 minutes on each side or until nice grill marks come through. The nectarine shouldn’t be too mushy but also shouldn’t be raw.
Assemble the smore by taking a graham cracker and splitting it in half. Place a piece of white chocolate on the bottom, followed by a slice of nectarine. Stop there and skewer a marshmallow. Cook over a flame until desired doneness. I like mine golden brown but almost going to be burnt too. Carefully place the marshmallow on the stack of Graham cracker, white chocolate, and nectarine, using the other piece of graham cracker to help slide it off the skewer and top it off with it.
Want to take it up another notch? Add a drizzle of caramel to the middle layers for extra gooey-ness.
